Deep Ellum Blue is a unique creation of Texas' cheese pioneer, Paula Lambert. Named for the neighborhood where her Mozzarella Company is located, which had a thriving blues scene in the 20s and 30s, this creamy, pasteurized cow's milk cheese has blue mold only on the exterior, not veined throughout like most blue cheeses. Washed with extra virgin oil near the end of its 3 month ripening, the resulting robust, earthy flavor of the exterior complements the slightly tart, mild interior.
